I arrive in Vietnam at 19.35 on 18.12.2019 and fly out at 00.40 on 2.1.2020. As this is 14 days and 5 hrs so not fully 15days do I still need a visa?

Vietnam offers 15-day visa exemptions with single entry for visitors from the U.K..

If you stay more than 15 days please apply for Vietnam visa
