I'd like to know if the arrival and the departure dates have to be exactly the ones I put on the visa form, because I'm not sure yet which ones it will be.

We would like to inform with you that you can estimate your arrival date to Vietnam as well as your departure to leave from Vietnam.
For example you apply for 1 month type of Visa and you choose your arrival date is 01st Dec then your Visa will be valid from 01st Dec to 01st Jan 2017, it does mean that you can enter and exit from Vietnam at anytime during this period.
