I am on a cruise ship and will be in Vietnam for one day. Can I get an e-visa. When arriving in Vietnam do I need to produce 2 photos at immigration.

If you plan to enter Vietnam by land or cruise, please apply evisa at this link https://www.vietnam-evisa.org/apply-e-visa.html
With evisa, you just need to bring approval letter printed along with passport to enter VIETNAM
