Good Afternoon,
My girlfriend and I, both of Italian nationality, will leave Italy for holidays in Vietnam on 01 August 2019 with flight Qatar Airways 968 and arrive in Hanoi on 02 August 2019 at 16:10, and we will leave Ho Chi Min at 09:15 on 16 August 2019 with flight Qatar Airways 973. I would like to know if I have to apply for a tourist visa or not, also in anticipation of possible airline delays on the return journey.

Vietnam offers 15-day visa exemptions with single entry for visitors from Italy. However, your passports should have at least six months of validity upon the date of arrival to meet airlines requirements, your arrival date is NOT within 30 days from your last exit date with visa exemption. Otherwise, you will need a Vietnam visa.

The processing time takes 1-2 working days for tourist and 3-4 working days for business.
We can process maximum 3 months visa for both.
