We're planning to visit Vietnam and Thailand for 2-3 weeks in January 2017, my wife and myself hold US passports but my mother in-law holds a Chinese passport; how can we get visas and how many days will it take?

We would like to inform that you have to get Vietnam visa to enter. By the way, you can get visa on arrival, first you just fill in application form in the link: http://www.vietnam-evisa.org/apply-visa.html. After receiving your payment, we will process and send to you the approval letter via your email (except holidays or weekend), then just need print the letter out and use it to get visa stamp directly at Vietnam airport.
You can put estimated date of arrival and then you can enter Vietnam any time in accepted period which depends on your visa (1 month or 3 months or 06 months, 01 years..). The visa will be valid from your arrival date.
